I decide to divide my review into four different posts: in this one, I tell you what I think of the episodes in general and my votes for each of them, then in the second post I'll talk about the characters I like the most of the New Trilogy, in the third one I will describe my favourite characters of the Old Trilogy, while in the fourth I'll deal with the parts I dislike and I will write some of my outstanding questions (I use the name "old trilogy" for the episodes IV, V and VI, released between 1977 and 1983, while the term "new trilogy" for the episodes I, II and III).
MY OPINIONS ABOUT THE EPISODES

First of all, I want to say that I appreciate the attention in the realisation of the special effects of the "old trilogy": if we consider the fact that they dated back in the 70s/80s, the results they managed to achieve are great (I have watched the restored version of the films).
Talking about the episodes, instead, my favourite one is the number III, because of the story full of important events, as the decision of Anakin to join the dark side of the Force, the discovery that Palpatine is Darth Sidious, the death of most of the Jedi knights and Padme, the exile of Yoda, the establishment of the Galactic Order, instead of the Republic, the birth of Luke and Leia.
Even if there are so many events, the episode isn't boring at all and it doesn't seem to be too long. I could call it the "psychological" episode, because the focus is on the emotions of the characters, on their way of thinking, their struggles and their will to gain more power.
A protagonist is the sense of the loss, which strikes the "good" characters, the Jedi and the ones connected with them. But there is also a hope, represented by the two newborn twins.
There is also an episode I don't like, which is the number II (I will tell you why in details in the third post) and another one which could have been much better, which is the VI: both have the potentials to be good episodes, but the number II becomes banal due to the mushy love story between Padme and Anakin, while the number VI have scenes which seem to last forever, as the chase in the forest moon of Endor, when Luke and Leia are seen by the shock troops of the Empire.
Then, I think the episode V is slightly different from the others, because is the only one in which the
ending is cut sharply, while in the other ones you know that the story will go on, but the story of each episode is concluded.

Episode III - Revenge Of The Sith (2005): 9/10
Episode IV - A New Hope (1977): 7/10
Episode V - The Empire Strikes Back (1980): 8/10
Episode VI - Return Of The Jedi (1983): 6/10
